Refrigerated toppings — add after reheating

Keep light sour cream and romaine at 40°F / 4°C or colder, separate from the frozen containers and raw chicken. For lettuce that is not ready-to-eat, rinse with running water and dry thoroughly; follow prewashed/ready-to-eat package instructions. Keep whole dry leaves or hearts in a clean covered container or produce bag with a dry paper towel, then chop on eating day when practical. Follow the package date and condition of the leaves; five days is a plan, not a guaranteed shelf life.

After reheating and checking both containers at 165°F throughout, add 45 g chilled light sour cream and 75 g fresh romaine across the full dinner. Neither topping is microwaved, baked, or frozen. If dividing into halves, use 22.5 g sour cream + 37.5 g romaine per heated container. Eat immediately.

Chicken-label adjustment

Keep 2,250 g raw chicken in every version. Adjust only the batch's dry rice approximately as follows, using the chicken's raw package label:

Calories per 112–113 g / 4 oz raw chicken Dry rice for the whole batch
100 550 g
110 500 g
120 450 g
130 400 g

The reference rice is 170 calories per 45 g dry. The reference chicken is 110 calories and 25 g protein per 112 g; the other reference labels and full recalculated nutrition are in the recipe. The updated default finished dinner is about 1,760 calories including both cold toppings. The rice quantities in this table are unchanged.

Do not buy for this version: baking soda, baking powder, a meat-tenderizer powder, seasoning packets, bouillon, tortillas, or bottled queso. They are not part of the recipe.
